The WPPO High-Temp Infrared Thermometer measures cooking surface temperatures up to 1112°F (600°C) — the range required for accurate readings in a wood-fired pizza oven, where standard kitchen thermometers max out well below operating temperatures. Point it at the oven floor or baking stone from a safe distance and get an instant surface reading without touching the surface or opening the door fully. Deck temperature is the key variable in cooking pizza correctly: too cool and the base will not crisp; too hot and it burns before the top cooks through. This thermometer removes the guesswork. Batteries are included.

Product Highlights
Reads the Full Wood-Fired Range
The thermometer measures surface temperatures up to 1112°F (600°C), covering the full operating range of a wood-fired oven floor — well beyond standard kitchen thermometers.
Instant, Non-Contact Readings
Infrared measurement reads the baking stone or oven deck from a safe distance in under a second, with no contact and no need to open the door fully.
Deck Temperature, Not Air Temperature
An oven's air temperature and deck temperature are not the same thing — the dome can be extremely hot while the stone is still warming up, and launching onto an underheated stone produces a soggy, pale base. Most pizza cooks target a deck temperature of 700–800°F for Neapolitan-style pizza; below 650°F the base will not blister correctly, and above 900°F it can char before the toppings cook.
Works Beyond WPPO Ovens
Use it with any WPPO oven — Le Peppe, Lil Luigi, Karma 25, Karma 32, and Karma 42 — and on charcoal, gas, kamado, and pellet grills for searing and other high-heat cooking.

Important Information
This thermometer measures surface temperature only. It does not measure air temperature inside the oven dome. Point it directly at the baking stone or cooking surface for an accurate reading.
Do not insert the thermometer into the oven or expose it to direct flame. It is designed for external, non-contact surface readings from the oven opening.
Wipe clean with a dry cloth after use. Do not submerge in water or expose the sensor to moisture.
Replace the batteries when readings become inconsistent or the display dims. Use AAA alkaline batteries only.
Frequently Asked Questions
Does this thermometer measure air temperature inside the oven?
No. This is an infrared surface thermometer — it measures the temperature of whatever surface you point it at, such as the baking stone or oven deck. It does not measure air temperature inside the dome. For wood-fired pizza cooking, the deck (stone) temperature is the critical measurement, which is exactly what this thermometer is designed to read.
What temperature should the oven deck be before I launch a pizza?
For Neapolitan-style pizza, a deck temperature of 700–800°F is typical. At this range, a thin pizza cooks in 60–90 seconds with a properly charred, crisp base and cooked toppings. For New York-style or thicker crust, 550–650°F gives more time for the crust to cook through without burning the base. Use the thermometer to confirm the stone has reached your target temperature before launching — not just the air temperature from the built-in dome thermometer.
Is this compatible with the Lil Luigi and Le Peppe ovens?
Yes. The thermometer works with all WPPO ovens, including the Le Peppe and Lil Luigi. Point it at the cordierite baking stone through the oven opening to get an instant deck temperature reading. Note that the Lil Luigi includes a built-in dome thermometer — the infrared thermometer reads the stone surface directly, which is a different and more precise measurement for pizza cooking.
Can I use this thermometer on a kamado or charcoal grill?
Yes. The thermometer is compatible with charcoal grills, gas grills, kamado grills, and wood pellet grills. Use it to measure grill grate or cooking surface temperatures for searing, reverse searing, or high-heat cooking where surface temperature accuracy matters.
The WPPO High-Temp Infrared Thermometer is a small tool that makes a consistent difference in wood-fired cooking results: point it at the stone, read the temperature, and launch when the deck is ready. Batteries are included, so it is ready to use out of the box.
